Need a little healthy spice up to old recipes or just want to have a definite conversation starter? Try adding a little Chayote to your kitchen! (also known as christophene or christophine, cho-cho, mirliton or pear squash) This fruit is native to Mexico belonging to the gourd family Cucurbitaceae, along with melons, cucumbers and squash.
You can eat this both raw and cooked as it provides an excellent source of vitamin C and amino acids which are the building blocks for protein. Chayote can be very versatile in the kitchen as it can be prepared with your favorite salad topped with a squeeze of lime juice. It can also be boiled, stuffed, mashed, baked, or simply enjoyed with your favorite vegetable plate. It can be difficult to portion your serving sizes correctly - especially when dining out. When looking at a normal sized plate, cut the plate into 4 imaginary quadrants. Fill one of the quadrants with your choice of lean protein (fish, meat, poultry for example), fill another quadrant with healthy complex carbohydrates (such as brown rice, whole wheat pasta, fresh fruit), and fill the remaining two quadrants with vegetables (salad with low fat dressing, steamed broccoli). Using this technique every time you eat will help you eat a more balanced meal.
